BUILDING BLOCKS
Every beer should be built on a strong foundation. Our Malted Grains offer our customers the ability to start their recipes on the right foot. Our malts are single variety, single batch, and offered in styles that provide their best expression.
Each barley, wheat, or other grain has its own story. Click through to learn more about them, their current styles, and best uses.
Pilot
Pilot is a UK bred barley variety that was originally selected for its higher temperature stable Beta-Amylase. Because of this, brewers are able to get a dryer finishing beer while mashing at a higher temperature. It brews any style very well due to its subtle malt flavor at lower color, but can also be a big help in higher gravity beers. All-around workhorse malt in the brewhouse.
Francin
Francin was bred for all malt Czech-style brewing in the Czech Republic. Malt breeding in the Czech Republic selects for higher functionality for Czech beer brewing styles, not necessarily on higher extract. Due to this, we offer it as both a traditional step-mash decoction Pilsner and a Bohemian Pilsner that has a higher kiln, which brings out more flavor. This malt performs well in styles where distinct malt flavors are desired to balance out hoppiness.
TALISMAN
Talisman is a UK winter barley variety that has Maris Otter in its genetic heritage. This barley has lower protein artifacts which allow us to create a lighter colored, full flavored malt with it. Talisman True British Ale is the perfect malt for beers where a British-Style malt with full flavor is desired.
WHITE WHEAT
White Wheat is a variety that grows especially well in the Skagit Valley. Our White Wheat has a higher potential extract than traditional wheats due to lower proteins contributed by our growing climate. It has a clean flavor profile that makes it suitable for any style beer where wheat is a contributing ingredient.
SKAGIT RYE
Skagit Malted Rye provides an opportunity for brewers to use locally-grown rye for flavoring and body addition. Rye adds both an earthy-malty flavor as well as a subtle signature spice. Since Rye is hulless, we recommend using it in conjunction with other malts or with rice hulls.
TRITICALE
Triticale is a wheat/rye hybrid grain that combines the dry spice from rye with the smooth creaminess of wheat. At lighter colors, this malt can be used to fully convert itself in the mash. It also can be used as a substitute for either Malted Rye or Malted Wheat. At darker colors, Triticale Malt brings out a grape-nut, chocolate, toasted flavor that blends well into complex malt bills.
