Opera was brought into the valley for 2 big reasons - it is a No-GN variety of barley and it has excellent yields when minimal fertilizer is applied. These combine for a grain that is suited to our growing practices and will behave very well for our customers. For distillers concerned with GN, this malt will fit the bill. For brewers, Opera has a clean malt profile with slight honey notes, making it a great base for your core beers.
